No Nut Not Not Derby Pie Bars
  1. Preheat oven to 350 degrees. Line a 9X13 pan with parchment paper, leaving the edges to overhang the pan so it is easy to remove the bars once they are cooked
  2. Combine flour, brown sugar and salt in the bowl of a food processor. Add in pieces of butter and continue processing until the dough comes together – about 3-5 minutes.
  3. Pat dough down evenly into the bottom of the 9X 13 pan and bake at 350 degrees for about 15 minutes until lightly browned.
  1. Spread oats on a large baking sheet and toast for about 4 minutes, just until lightly browned. Set aside.
  2. Melt butter in a medium saucepan, stirring frequently, until slightly browned and nutty smelling. Remove from heat and set over a bowl of ice water to cool.
  3. Transfer butter to a large bowl. Stir in brown sugar, sugar, and salt and mix well.
  4. Add in eggs and egg yolks, vanilla, and bourbon and stir until well combined. Mix in flour. Finally add chocolate chips and toasted oats.
  5. Pour filling evenly over crust and bake at 350 degrees for 22-25 minutes, until top is set and edges are ever so slightly browned.
  6. Allow bars to cool completely before cutting. You can remove the parchment paper from the pan after about fifteen minutes to help them cool faster or pop the entire pan into the refrigerator.

Bars will keep at room temperature for about 4-5 days in an airtight container. But they won’t last that long!
