It definitely feels like summer here today.
Not that I am complaining. I would happily take 90 degrees every day for the next four months. The sun is shining, the pools are open and school is hiding down. This might just be my favorite week of the year.
I spent the morning working diligently in my yard – weeding flower beds, digging out dead bushes, planting flower pots . . . and when I came in I was parched. I guess the three large S’well bottles of water I downed while working didn’t quite quench my thirst. Or maybe I was just ready for a break – lol!
As much as I love water, I was craving something a little more festive for this beautiful summer afternoon. I found my thoughts drifting to margaritas, moscow mules and mojitos. But knowing I have a full day still ahead of me I definitely did not ant an alcoholic beverage at 1:15.
So while I heated up some chicken for my lunch time salad I decided to brew a pitcher of Marvelous Moji-Tea.
This recipe is super simple, but it’s also super delish – assuming you like mojito’s of course!
I brewed up a mixture of green tea and mint tea and let it steep for quite awhile to ensure I’d have a nice rich flavor. Once you add the ice and cold water the tea flavor is diluted and so you always need to brew iced tea extra strong. Then I added just a touch of honey – the recipe suggest 1/2 cup, but that’s just a starting point. I don’t like me iced-tea sweet, so I only added two tablespoons of melted honey to my entire pitcher. Feels free to use more or less depending on your taste
After stirring in my honey, I added some ice cubes because I was transferring my Moji-tea to a glass pitcher and I wanted to be sure to bring the temperature down before the transfer so as not to crack the glass. Then I filled the pitcher to the top with filtered cold water, added some fresh mint leaves and lime edges and ta-da! I had a delicious and fun iced-tea to enjoy with my lunch.
You probably should pop the Moji-Tea in the fridge at this point and allow it to cool down for at least 30 minutes, but I just filled my glass with lots of ice and enjoyed my tea straightaway.
This Marvelous Moji-Tea was the perfect drink for a super hot day.
It’s pretty and festive and would make the perfect addition to your next barbecue or baby shower.
