Instructions
  1. In a large bowl, mash chickpeas with a potato masher. Or for a creamier consistency, pulse in a food processor. Combine chickpeas, dill pickle, green onions, sunflower seeds and garlic. Toss to combine.
  2. In a medium bowl, whisk together mayonnaise, mustard, salt, pepper and vinegar. Add to dry ingredients and mix well.
  3. Refrigerate for at least 1 hour, although overnight is better.
  4. To serve, spread hummus on the inside of the pita and layer chickpea salad and fresh veggies of choice in the pita.

Chickpea salad can also be served with pita chips, crackers, on a bed of lettuce or straight out of the bowl.
