Heat your sweet potato in the oven or the microwave. If you don’t have a pre-baked sweet potato, cook in microwave for about 7 minutes or in a 400 degree oven for 45-60 minutes.
Heat 1 tablespoon of olive oil in a medium non-stick skillet. Add spinach, salt, pepper and garlic and cook over medium heat until spinach is wilted – about 3 minutes. Set aside. Omit this step if using a leftover veggie.
Heat 1 tablespoon oil in a small non-stick skillet. Gently crack an egg into the skillet and immediately reduce heat to low. Cook slowly over low heat until whites are set and yolk is thickened, but not hardened.
Slice sweet potato in half. Top with spinach, fried egg and blue cheese.
