Hi! And Happy April!
Well, we made it through the worst of the winter (I hope) and on this first day of April I finally feel like spring is on the horizon. I don’t know about you, but after a long, cold, gray, bleak winter I am definitely read for spring.
April is a busy month for us. We’ve got tennis matches and baseball games and we are going on VACATION over spring break! Accordingly, the meal plan is pretty sparse on actual meals this month.
But I still find monthly meal planning to be a worthwhile activity. I am definitely saving some money at the grocery store, Kelly’s decision to become a vegetarian has helped with that as well, and have eliminated most of the “what’s for dinner?” anxiety on busy nights.
We don’t always stick exactly to the plan – especially in the spring when most of our activities are at the mercy of the weather – but even when I have to shift things around I like knowing that we have the ingredients we need to throw together a quick weeknight meal.
I think this menu shows that you don’t have to plan every night, nor even adhere strictly to the plan for meal planning to work for you. A few meals a week, a well-stocked pantry and a bit of flexibility are all you really need to reap the benefits of meal planning.
So, without further ado – here is my plan for April:
